Jamie Oliver Tomato, Bacon and Chicken Dish
This is my adaptation of a Jamie Oliver recipe that I saw on an episode of The Naked Chef. Its super duper easy to do and tastes simply amazing. I call it my “Jamie Oliver Tomato, Bacon and Chicken dish“. Its essentially pan fried chicken with bacon, tomatoes and basil leaves.
You need (serves 2):
- 2 chicken breasts
- 2 strips of streaky bacon or back bacon
- 2 medium sized tomatoes and some cherry tomatoes sliced in half
- 5-6 Sweet basil leaves
- Extra virgin olive oil and sea sat (or regular salt) and pepper
How to:

Marinade the chicken breasts in olive oil, sea salt (or regular salt) and pepper and leave aside for about 1/2 and hour.

Heat up a frying pan, drizzle some olive oil in it, and place the chicken breasts in it.

Lay a strip of bacon over each chicken breast.

Flip the chicken breasts and cook the other side. Remove the bacon and fry in the oil until semi crisp.

Move the chicken to one side of the pan and add in the sliced tomatoes. I like mine with a lot of tomatoes so I usually over do it. When the tomatoes are soft, using your spatula, just lightly press them. They will become pulpy which is what you want to make a thin sauce for your chicken.

Add back your chicken to the tomato mix. You can add a bit of water if you want it wetter.

Add in the basil leaves and stir through. Turn off the fire and serve. Don’t forget to spoon the sauce over it.
I can do this in under half an hour. It hardly needs any preparation except for the marinating of the chicken. Oh, and the best part is that this dish can be eaten cold too. I’ve made it for a picnic and it was just as awesome. I serve it by itself with a green salad and mashed potatoes. Just looking at it makes me feel like cooking it!
